While traditional Bún Bò Huế is defined by beef cuts and pork hock, modern Vietnamese noodle shops created the chicken version to offer a lighter, cleaner alternative. It preserves the authentic, royal Hue-style foundations of a deeply fragrant broth powered by lemongrass, chilli oil, and fermented shrimp paste, but swaps in delicate chicken slices.
Contains crustacean/shellfish (shrimp paste) and fish sauce. Thick rice vermicelli noodles are naturally gluten-free, but check for cross-contamination risks. Prepared in a kitchen that also handles peanuts, wheat, egg, dairy, and sesame.
Best enjoyed immediately while piping hot. For takeaway, keep the spicy broth, thick noodles, chicken slices, and fresh garden herbs in separate containers; refrigerate leftovers within 2 hours and consume within 24 hours.
If refrigerated, store the fresh herbs and lemon separate while heating. Reheat the spicy broth until it achieves a rolling boil before combining with the noodles and chicken.
Bring the aromatic broth to a rolling boil. Place the thick vermicelli noodles and chicken slices in a deep serving bowl, pour the boiling broth over to completely submerge the elements, then top with fresh spring onions.
