Thick rice vermicelli noodles, combination beef cuts (beef brisket, thinly sliced beef), beef ham (chả lụa), spicy beef bone broth infused with lemongrass and shrimp paste, red onion, spring onion, fresh coriander, sliced red chilli, side of bean sprouts, fresh herbs, lime wedge.
Bún Bò Huế originated in the former royal capital of Huế in Central Vietnam, famed for its distinctively bold, complex, and fiery flavour profile. Unlike Phở, it features thick cylindrical vermicelli noodles and a robust broth defined by the intense fragrance of lemongrass and fermented shrimp paste (mắm ruốc).
Contains crustacean/shellfish (shrimp paste) and fish sauce. Thick rice vermicelli noodles are naturally gluten-free, but check for potential cross-contamination. Prepared in a kitchen that also handles peanuts, wheat, egg, dairy, and sesame.
Best enjoyed immediately while piping hot. For takeaway, keep the broth, noodles, meat, and fresh herbs in separate containers; refrigerate leftovers within 2 hours and consume within 24 hours.
If refrigerated, store the fresh herbs and lime separate while heating. Reheat the broth until it reaches a rolling boil before pouring over the noodles and meat.
Bring the broth to a rolling boil. Place the vermicelli noodles and beef combination in a deep bowl, pour the boiling broth over to completely submerge the ingredients, then garnish with fresh onions.
Serve hot. Accompany with bean sprouts, fresh herbs, a squeeze of fresh lime, and extra chilli oil or satay paste to elevate the authentic spiced profile.
