The dish is named after its dramatic presentation, where fine egg noodles are carefully shaped in a double-strainer basket and deep-fried into a crisp, intricate 'nest'. It is then filled to the brim with premium stir-fried ocean seafood, meats, and bright market vegetables bathed in a rich, glossy gravy that slowly softens the inner noodles while leaving the outer rim perfectly crunchy.
