The sizzling hot plate style (adapted as a vegetarian option inspired by traditional Vietnamese 'né' street dining formats) provides a magnificent canvas for plant-based ingredients. Flash-frying fresh local market greens and protein-rich crisp tofu in a roaring wok before transferring them onto a blistering cast-iron skillet creates an exceptional table caramelization, capturing natural sugars and releasing an intensely rich aroma.
