Tofu (đậu phụ) has a long and celebrated history in Vietnamese Buddhist vegetarian cuisine ('ăn chay'). Combining these crisp, golden-fried protein cubes with the soft, cloud-like texture of a steamed open bao bun offers a delightful, modern plant-based street food experience.
Contains gluten (wheat bun, sauces) and soy (tofu, sauce). Prepared in a kitchen that also handles peanuts, sesame, egg, dairy, fish sauce, and shellfish.
Best enjoyed immediately while the bun is hot and fluffy and the tofu maintains its texture. Leftovers can be disassembled and stored in separate airtight containers in the refrigerator for up to 24 hours.
If refrigerated, separate the fresh cucumber, herbs, and chilli from the bun and tofu prior to reheating.
Reheat the fried tofu in an air fryer or oven at 180 degrees Celsius for 4-5 minutes to restore its crisp exterior. Steam the bao bun for 1-2 minutes, or wrap in a damp paper towel and microwave for 15 seconds.
Place the warm crispy tofu inside the heated bun, add the house sauce, and layer with fresh cucumber, coriander, and sliced chilli before serving.
