Golden crispy Vietnamese-spiced fried chicken served with fragrant wok-fried rice and fresh salad
Steamed jasmine rice, marinated chicken piece (typically Maryland or thigh) with crispy spiced batter coating, scrambled hen eggs, shredded cucumber, pickled carrot julienne, minced garlic, aromatic crispy fried shallots, soy sauce, fish sauce, five-spice seasoning, vegetable cooking oil.
Crispy fried chicken fried rice (cơm gà xối mỡ) is an immensely popular southern Vietnamese street food classic. Literally translating to 'fat-dripped chicken,' the traditional cooking technique involves pouring boiling oil over poached, five-spice-marinated chicken to rapidly crisp the skin while retaining juicy tenderness inside, served alongside wok-tossed red or garlic fried rice.
Contains gluten (wheat flour batter coating, soy sauce seasoning), soy (soy sauce), and egg (scrambled hen eggs). Prepared in a commercial kitchen environment that also handles peanuts, sesame, dairy, and shellfish.
Best enjoyed immediately while the fried chicken skin holds its signature crunch and the rice is fluffy. Leftovers can be stored in an airtight container in the refrigerator for up to 48 hours.
If storing leftovers, separate the crispy chicken piece and fresh/pickled vegetables from the fried rice before reheating to maintain proper textures.
To reheat, place the fried rice in a hot skillet over medium-high heat for 3 to 4 minutes. For the crispy chicken, heat in an air fryer or preheated oven at 180 degrees Celsius for 5 to 6 minutes to restore its crispy golden texture without making it greasy.
Serve hot on a flat plate. Top with a scattering of fried shallots and pair with the crisp cucumber, tangy pickled carrot salad, and a side of sweet chili-infused soy sauce or light fish sauce dressing.
