While folded bao buns (gua bao) originated as a Taiwanese street food staple, they have become incredibly popular in modern Vietnamese fusion dining. The soft, pillowy steamed bun acts as the perfect vehicle for the satisfying crunch and savoury flavours of crispy fried chicken.
Contains gluten (wheat bun, chicken coating, soy sauce) and soy. May contain egg and dairy depending on the chicken batter. Prepared in a kitchen that also handles peanuts, tree nuts, fish sauce, shellfish, and sesame.
Best eaten immediately while the bun is soft and the chicken is crispy. If needed, store leftover components separately in an airtight container in the fridge for up to 24 hours.
If refrigerated, separate the bun, chicken, and fresh garnishes before reheating to prevent the bun from becoming soggy.
Reheat the fried chicken in an air fryer or oven at 180 degrees Celsius for 5-7 minutes until hot and crisp. Gently warm the bun in a steamer for 1-2 minutes or microwave with a damp paper towel for 15 seconds.
Place the hot crispy chicken inside the warmed bun. Top with the house sauce, cucumber, carrot, fresh herbs, chilli, and crispy shallots. Serve immediately.
