This plant-based variation features golden pan-seared tofu strips as its protein foundation. Tied closely to Buddhist vegetarian cooking traditions, it provides a highly refreshing, low-fat appetizer that harmonizes chewy rice paper, soft noodles, and cooling garden-fresh herbs.
Contains soy and gluten (tofu, hoisin dipping sauce base). Peanut dipping sauce option contains peanuts. Can be customized entirely vegan by pairing with the peanut or soy-based dipping sauce instead of traditional fish sauce.
Best enjoyed immediately while the rice paper wrappers are soft, pliable, and moist. If not consuming right away, wrap carefully in a slightly damp paper towel followed by plastic wrap to prevent the wrapper from drying out; consume within a few hours.
